Ultimate Chicken Panini

Time to up your game from a regular old sandwich or grilled cheese to the Panini. This classic Italian work of art is usually made of un-sliced bread that isn't toasted on both sides. It can be filled with cheese and whatever leftovers you have an finished in a heated press. If it's your first rodeo Kenny's gonna show you how to ride, well  how to make a Panini that is. Enjoy

Ingredients
  

Chipotle Sauce
  • 1 cup mayonnaise
  • 1 Tbsp paprika
  • 1 oz Sun-dried tomatoes chopped
  • 1 oz Chipotle peppers chopped
Marinade
  • 1 cup vegetable oil
  • 1 cup orange juice
  • 3 Tbsp paprika
  • 1 Tbsp cracked black pepper
  • ½ Tbsp sea salt
  • 1 Tbsp garlic powder
  • ½ Tbsp ground cumin
  • 2 large boneless skinless chicken breasts thinly sliced
For Sandwich
  • Zucchini sliced lengthwise into strips
  • Baguette or French bread
  • Tomato cut into round slices
  • Red onion cut into round slices

Method
 

For Chipotle Sauce:
  1. Blend mayonnaise, paprika, sun-dried tomatoes and Chipotle peppers in a blender.
The Marinade:
  1. Combine vegetable oil, orange juice, paprika, salt, pepper, garlic and cumin in large bowl and blend with a hand blender about 2 minutes until Marinade is slightly thickened and light orange in color. Add sliced chicken and let marinate overnight.
  2. Preheat grill, large skillet or flattop on medium high heat.
  3. Cook chicken for 3 minutes per side (don't overcook).
  4. Grill Zucchini 1 minute per side (don't overcook).
  5. Preheat Panini press on medium heat.
  6. Spread Chipotle Sauce on bread bottoms, on top bottom half with tomato slices and rings of red onion.
  7. Add Grilled Zucchini and chicken on top.
  8. Place sandwich on Panini press until bread is crispy (about 2-3 minutes).
  9. Cut in half diagonally and serve with your favorite chips.
