Method
For Chipotle Sauce:
- Blend mayonnaise, paprika, sun-dried tomatoes and Chipotle peppers in a blender.
The Marinade:
- Combine vegetable oil, orange juice, paprika, salt, pepper, garlic and cumin in large bowl and blend with a hand blender about 2 minutes until Marinade is slightly thickened and light orange in color. Add sliced chicken and let marinate overnight.
- Preheat grill, large skillet or flattop on medium high heat.
- Cook chicken for 3 minutes per side (don't overcook).
- Grill Zucchini 1 minute per side (don't overcook).
- Preheat Panini press on medium heat.
- Spread Chipotle Sauce on bread bottoms, on top bottom half with tomato slices and rings of red onion.
- Add Grilled Zucchini and chicken on top.
- Place sandwich on Panini press until bread is crispy (about 2-3 minutes).
- Cut in half diagonally and serve with your favorite chips.
