Tuscan Garlic Salmon with Spinach and Tomato

An amazing recipe for a Tuscan garlic salmon over a delicious spinach and tomatoes saute. Pan-seared salmon in a delicious garlic butter sauce with spinach, tomatoes and basil! This easy and healthy salmon recipe takes just 30 minutes from prep to perfection, enjoy.

Ingredients
  

  • 1 pound salmon filet
  • 2 Tbsp Olive Oil
  • 1 Tbsp extra virgin olive oil or1 Tbsp butter
  • 1 tsp smoked paprika
  • ¼ tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 1 tsp Kosher Salt
  • 1 tsp cracked black pepper
  • 1 small onion chopped
  • 4 garlic cloves minced
  • 3-4 Roma tomatoes chopped
  • 6 oz fresh spinach
  • ¼ cup fresh basil leaves chopped
  • ½ cup vegetable stock or white wine
  • An extra Tbsp high quality olive oil

Method
 

  1. Mix dry ingredients
  2. Season salmon filet on both sides.
  3. In a large skillet heat 2 Tbsp Olive Oil on medium heat.
  4. Cook salmon for about 5 minutes until done. Set aside on a plate.
  5. In the same skillet add 1 Tbsp of olive oil or 1 Tbsp butter.
  6. Add onions and garlic. Cook about a minute until translucent.
  7. Add tomatoes, basil, spinach and vegetable stock or white wine.
  8. Cook on medium heat for about 5 minutes just until spinach begins to wilt a bit and tomatoes start to release juices. Taste and add seasoning if needed.
  9. Return Salmon back to the skillet for a quick reheat.
  10. Drizzle with a good quality olive oil if desired and serve immediately.
