Method
- Remove steak from refrigerator and let rest for at least 20 minutes at room temperature.
- Heat cast iron skillet on medium high heat.
- Season steak generously with salt and pepper on both sides (don't forget to season the perimeter of the steak as well).
- When skillet starts to show a sign of smoke drizzle with olive oil. Make sure the pan is well coated with oil.
- Lay steak(s) in pan to cook.
- Add thyme and fresh garlic.
- Flip steak after first minute .
- Use tongs to rub garlic across the steak for even more Flava!!
- Add butter to pan with garlic and thyme
- Use butter mix to baste steak (continuing to flip every minute)
- Remember to sear the strip of fat along the side.
- Remove steak in about 8 minutes for a perfect medium.
Let rest for 5-10 minutes. Slice against the grain.
