Prepare Chili the night before.
Shred cheeses and put a thin layer on both slices of bread.
Spoon a thin layer of chili over the cheese on one side of bread.
Place a few jalapeños over the Chili layer.
Place a layer of torn cilantro over the jalapeños.
Layer a few tortilla strips, close Sandwich and place on preheated cast iron(medium high heat).
Grill to a slight brown on each side then add a thin layer of mayo to each side a grill for a total of 4 flips.
Check the inside to ensure cheese has melted, remove from skillet, slice in half,
