In a large bowl clean Goat meat with lime juice and vinegar.
Season Goat with salt, pepper, Allspice, All purpose Seasoning, 2 stalks of the thyme and Curry powder.
In a food processor or blender, mix shallots 5 garlic cloves 1/2 of the small onion in 1/8 cup water.
Pour mixture over Goat, massage into meat and let marinate for 3 hours or over night.
In a deep pot heat 2 Tbsp oil over medium high heat.
Sear Goat in batches (be sure not to over crowd pan).
Once Seared reduce heat to medium and cover for 10 minutes.
Pour hot water in your Marinade bowl (about a 2 cups).
Pour watery marinade over Goat, stir and cook on medium low for 2-3 hours checking texture every hour. Add water as needed.
Once meat is tender add onions, peppers and potatoes. Make sure liquid just covers everything and cook at medium high for about 20 minutes until potatoes are tender. Taste. Salt if needed.
Serve over white rice and prepare to Smash!
