Sweet Chili Shrimp Stir-fry

Stir fried rice is enjoyed around the world and its easy to make at home. The sweet chili gives a Thai flair to this stir fry recipe that everyone will love, enjoy.

Ingredients
  

  • 1-2 pounds large shrimp cleaned and de-veined
  • 1 large red bell pepper sliced
  • 1 small onion sliced
  • 1 bunch of Asparagus cut into thirds
  • 2 Tbsp Olive Oil
  • 4 garlic cloves diced
  • ½ cup sweet chili sauce
  • 5 Tbsp soy sauce
  • ¼ cup water
  • 3 tsp cornstarch
  • For Coconut Rice
  • 1 15 oz can Coconut milk
  • ½ cup water
  • 1 ½ cup Jasmine Rice
  • 1 tsp Salt

Method
 

  1. In a small bowl whisk together sweet chili sauce, soy sauce, water and cornstarch. Combine well and set aside.
  2. Heat a large cast iron skillet on medium high heat.
  3. Add 1 Tbsp oil.
  4. Once heated add stir fry veggies, mix and cook for 4-5 minutes until softened a bit then transfer to a plate.
  5. Add remaining Tbsp of oil.
  6. Season Shrimp with salt and pepper then add them to the skillet and cook for 2 minutes per side. Once golden transfer to plate with veggies.
  7. Add sweet chili mixture to the skillet and simmer for a couple minutes until sauce thickens.
  8. Return Shrimp and stir fry. Toss in the sauce and serve over Coconut Rice.
Oh yeah...! As for the rice...
  1. In a medium saucepan add water and coconut milk.
  2. Bring to a boil.
  3. Add rice and reduce heat to a simmer.
