Stuffed Crab Bites

OK people these ain't your grandmas crab bites. Packed with spinach, chewy mozzarella, and tender crab meat these bites are a mouthful. Enjoy

Ingredients
  

  • 8 oz Lump crab meat
  • 8 oz Cream Cheese
  • 2 Tbsp sour cream
  • 2 tsp of each:
  • Hot sauce
  • Worcestershire sauce
  • 1 tsp garlic paste
  • ¼ cup bread crumbs For binder
  • ½ cup frozen spinach cooked drained and dried
  • Juice of 1/2 lemon
  • Breadcrumbs
  • All purpose flour
  • 2 eggs
  • All purpose Seasoning
  • Old Bay Seasoning
  • ½ cup Mozzarella cheese shredded
  • Pinch of Sugar
  • Dipping Sauce
  • ¼ cup mayonnaise
  • 2 Tbsp Sriracha
  • 2 Tbsp ketchup
  • 2 Tbsp Worcestershire sauce
  • Pinch of Sugar
  • 1 tsp garlic paste
  • 1 tsp paprika
  • 1 tsp Old Bay Seasoning

Method
 

  1. In a large bowl combine cream cheese, spinach, sour cream, hot sauce, Worcestershire sauce, garlic paste, all purpose Seasoning, Old Bay Seasoning, lump crab, lemon juice, sugar, a bit more Old Bay Seasoning, breadcrumbs and Mozzarella cheese. Fold ingredients together well.
  2. In 3 smaller bowls add flour to first bowl.
  3. Eggs (beaten) to second bowl
  4. And breadcrumbs to third bowl.
  5. Season flour and breadcrumbs with garlic powder, onion powder, all purpose Seasoning and Old Bay.
  6. Roll crab mixture into balls or smaller bites (whatever floats your boat).
  7. First dredge in seasoned flour then in egg mixture and finally in the breadcrumbs.
  8. Preheat oil to 350°F in deep fryer or pan.
  9. Cook crab bites 3-4 minutes or until a perfect golden brown.
  10. Remove from oil on a wire rack.
  11. Serve with desired dipping sauce.
