Southwestern Egg Roll

Time to complete the egg roll trilogy with Southwestern egg rolls. Check out Kenny as he puts together his version of this southern-style dish straight from his kitchen. TasteDis

Ingredients
  

  • 3 garlic cloves minced
  • ½ yellow onion diced
  • ½ diced red pepper
  • 1 shredded chicken breast
  • 10 oz black beans
  • 1 bowl spinach
  • 10 oz bag corn frozen
  • 1 Tb olive or grapeseed oil
  • 1 package egg/spring rolls

Method
 

  1. Preheat oil in a pan over medium heat
  2. Add garlic and onions and saute for 1 min
  3. Add red pepper and spinach and let simmer 2-3 minute
  4. Add 6 oz corn and a can of black beans
  5. Finally, add chicken mixture and reduce heat to med-low
  6. Add garlic onion and black pepper cumin and seasoning then cover for 5 min
  7. Add in 1 cup cheese mixture and cover
Roll'n the egg roll
  1. Make an egg wash with 1 egg and several Tbsp of water
  2. Brush  egg wash onto edges of spring roll
  3. Add filling to the center of the roll
  4. Tuck in corners and roll
  5. Preheat oil in a skillet on medium heat
  6. Cook in oil for several minutes until brown turning occasionally
