Southwestern Chicken Taco

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 cup Mexican shredded cheese
  • 1 pkg taco seasoning or TasteDis special seasoning blend
  • 1 teaspoon minced garlic
  • ¼ red onion diced
  • 1 small can diced tomatoes
  • 1 small can sweet corn
  • 1 small can black beans drained
  • 2 Tbsp Olive Oil
  • 1 pkg pita bread
Seasoning Blend
  • 2 Tbsp Chili powder
  • 1 Tbsp Adobe Seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper
  • ½ Tbsp dried oregano
  • 1 Tbsp cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 2 teaspoons cracked black pepper

Method
 

  1. Cut chicken breasts into bite-sized chunks.
  2. In a medium-sized pan, add 1 Tbsp oil garlic and red onions. Saute until fragrant. Medium heat.
  3. Add chicken and Seasoning. Cook until chicken is no longer pink. Drain.
  4. Add tomatoes, corn, and drained black beans. Bring heat to a simmer.
  5. In a separate skillet on medium-high heat add 1 Tbsp of oil to brown pita bread. About 30 seconds per side.
  6. Build Super Tacos top with cheese and desired toppings.
