Method
Chicken marinade
- Whisk marinade ingredients together.
- Add to chicken and marinade 1-8 hr or over night. longer the better
Roasted Corn
- Whisk together melted butter, parsley, thyme, garlic and rosemary
- Allow to get fully mixed to a milky consistency
- Preheat over to 425
- Fully coat corn with butter mixer and wrap in aluminum foil
- Bake for 25 min
- Once roasted carefully remove kernel from cob (when using a knife use caution)
Chicken breast
- Heat skillet over med high heat until hot.
- Add marinaded chicken breast to hot skillet and grill for 6-8 min per side (165 internal temp)
- Remove chicken allow to rest several minuted
- Cut breast into thin slices
Building the Salad!
- Line a nice size salad bowl with the greens
- Add black beans, roasted corn, avocado slices and corn chip
- Top with your favorite dressing
