Smoked Corned Beef

Making great smoked corned beef at home doesn't have to be complicated. Kenny walks you thru his recipe for smoking a corned beef on a Traeger grill, enjoy.

Ingredients
  

  • 4 lb Corned Beef Brisket
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Quality Dijon Mustard
  • Corned Beef seasoning packet

Method
 

  1. Preheat Smoker to 250°F
  2. Remove Corned Beef from package. Pat dry with paper towels.
  3. Rub Worcestershire all over Corned Beef. Repeat with Dijon Mustard(Thoroughly).
  4. Place Corned Beef directly on grill grates fat side up.
  5. Close lid and let smoke 2-3 hours. Internal temp should be between 140 and 170°F
  6. Remove from smoker.
  7. Place Corned Beef in a Dutch oven or aluminum pan.
  8. Pour over warm water or chicken stock around Corned Beef about 3/4 high.
  9. Season top with seasoning packet, cover tightly and return to the smoker.
  10. Close lid and let smoke and braise another 2-3 hours or until internal temperature reaches between 195-205°F. Corned Beef should be super tender.
  11. Remove from smoker and let rest 20 minutes in juices.
  12. Then let rest on the cutting board for 10 minutes. Slice against the grain
