Shrimp Fajitas in a Magic Marinade

Fajitas always an excellent choice for tasty and nutritious meal. The fajita comes in many different varieties and this recipe is for the seafood lover. This shrimp recipe includes a marinade that adds a nice flavorful kick to tender meat.  If shrimp isn't your thing it can be replace with your choice of protein. TasteDis

Ingredients
  

  • ¼ cup of Olive Oil
  • 4 garlic cloves minced
  • 1 Tbsp lime juice from 1/2 a lime
  • 1 Tbsp Cajun Seasoning
  • ½ tsp Salt
  • Shrimp Fajita ingredients
  • 1 lb large Shrimp (cleaned peeled and deveined
  • 2 Bell Peppers any color sliced
  • ½ medium onion sliced
  • ¼ cup cilantro chopped
  • 2-3 teaspoons lime juice from 1/2 lime
To Serve
  • 8 small flour tortillas
  • Jalapeño Ranch or Yum Yum sauce
  • 1 lime cut into wedges Optional
  • 1 Avocado sliced/Optional

Method
 

  1. In a small bowl, combine marinade ingredients: 1/4 cup Olive oil, 4 garlic cloves (minced), 1 Tbsp lime juice (from 1/2 lime, 1 Tbsp Cajun Seasoning and 1/2 tsp Salt.
  2. Slice bell peppers and onions thin, place in a bowl. Pour 1/2 of the Marinade over the vegetables, toss to combine and set to the side.
  3. In a second bowl, pat Shrimp dry with a paper towel, add the remaining Marinade and stir to combine.
  4. Heat a large pan over Medium heat add 1/2 Tbsp oil, when hot add Shrimp in a single layer for 1-2 minutes per side or just until cooked through. Transfer to a plate.
  5. In the same pan add 1/2 Tbsp oil and add the marinated vegetables and Saute until golden brown on the edges (about 10 minutes) stirring occasionally, then turn off the heat.
  6. Add Shrimp back to the pan along with 1/4 cup of cilantro and 2-3 teaspoons lime juice (from 1/2 lime) to taste over mixture and toss to combine.
  7. Serve Fajitas with warm or toasted tortillas and Yum Yum (what i used) or any sauce of your choice.
