Sesame Chicken Breast

Here is an Asian-inspired dish that's sure to please sesame chicken breast. We take chunks of chicken breast and add a delicious ginger and soy-sesame sauce that can be served over a bed of rice. Enjoy

Ingredients
  

  • 1 lb. Boneless skinless chicken breasts cut into bite-sized chunks.
  • 1 large egg
  • 3 Tbsp cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 Tbsp Olive Oil divided
For the sauce
  • ½ cup low sodium soy sauce
  • 2 Tbsp rice or apple cider vinegar
  • ¾ teaspoon sesame oil
  • 1 Tbsp cornstarch
  • 3 Tbsp packed brown sugar
  • 1 teaspoon minced garlic
  • ½ teaspoon ground ginger
  • 2 teaspoons sesame seeds
  • ½ cup of water or chicken stock

Method
 

  1. In a small bowl whisk together the ingredients for the sauce. Set aside.
  2. Cook rice and steam or saute vegetables. Set aside.
  3. In a small bowl whisk egg, with cornstarch, salt, and pepper. Add chicken chunks to the batter and mix well.
  4. In a large skillet heat 1 Tbsp oil.
  5. Cook chicken in two batches using the second Tbsp for the second batch.  Cook until golden brown on each side.
  6. Once the chicken is done pour sauce over it and simmer on medium-low heat until sauce thickens. Remove from heat.
  7. Serve over white rice with steamed or Sautéed Veggies. I went with the Sautéed Veggies. Delicious!!!
