Sautéed Kale with Lemon and Garlic

Kale is an excellent choice if you're looking for healthy greens. Much heartier than spinach here is a recipe to tone down the toughness and leave you with a tender tasty treat. Enjoy

Ingredients
  

  • 2 bunches of kale any variety
  • 2 Tbsp Olive Oil
  • 3 cloves garlic thinly sliced
  • Pinch of red pepper flakes
  • ½ teaspoon Kosher Salt
  • 1/ teaspoon fresh cracked black pepper
  • Juice of 1 small lemon

Method
 

  1. Pull the kale leaves from their stems. Coarsely Chop the leaves. Rinse them but do not dry.
  2. Heat oil in a large saute pan over medium-high heat until shimmering.
  3. Add the garlic and red pepper flakes. Cook until fragrant (about 1 minute, do not let the garlic brown).
  4. Add the kale (a few handfuls at a time). Stirring until it starts to wilt.
  5. Stir until all the Kale is added.
  6. Stir in salt and pepper.
  7. Cover and cook, stirring occasionally until kale is tender about 5 minutes.
  8. Remove from heat. Stir in the lemon juice and serve.
