Ingredients
  

  • 4 red snapper fillets
  • 2 Tablespoonfuls of oil divided
  • Salt and pepper
  • ½ cup onion diced
  • ½ cup bell pepper diced
  • 2 garlic cloves minced
  • 1 cup tomatoes diced
  • ½ cup chicken stock
  • ½ cup heavy whipping cream
  • 1 Tbsp Creole Seasoning
  • Fresh parsley chopped Handful

Method
 

  1. Season Red Snapper with salt and pepper on both sides.
  2. Heat olive oil in a large skillet to medium heat.
  3. Add diced onions and peppers. Saute about 5 minutes until softened.
  4. Stir in garlic and saute another minute.
  5. Add diced tomatoes and chicken stock. Let simmer for 5 minutes.
  6. Stir in heavy whipping cream and Creole Seasoning. Simmer for an additional 2-3 minutes until it thickens slightly.
  7. Meanwhile in a separate skillet heat remaining oil on medium high heat.
  8. Add Red Snapper and cook 3-4 minutes per side until golden brown and done.
