Peach Cobbler

The peach cobbler is loved by many. Made with juicy peaches and a flaking buttery crust that's sprinkled with sugar and cinnamon this peach cobbler dessert is amazing alone or with a scoop of ice cream. Enjoy

Ingredients
  

  • 2 packages of pie crust
  • 4 15 oz cans of sliced peaches or 1 60oz jar if available
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 Tbsp pure vanilla extract
  • 3 Tbsp butter melted
  • 4 Tbsp cornstarch
  • 4 Tbsp water
  • Juice of half a lemon Optional

Method
 

  1. Preheat oven to 350° F.
  2. Remove pie crust and stretch it out with a rolling pin to desired size for baking Pyrex dish (it may take one crust plus a small piece from crust two).
  3. In a large Pyrex dish, place your pie crust so it fills the dish on both sides.
  4. Place in oven and bake for about 20 minutes just enough so your foundation isn't doughy.
  5. While crust is in the oven, pour peaches into a large pot on medium low heat.
  6. Stir in your white sugar, brown sugar, cinnamon, nutmeg, vanilla extract and lemon juice. Stir gently until all ingredients are combined well.
  7. In a small bowl combine water and cornstarch. Whisk together to create a slurry.
  8. Pour slurry concoction into peach mix and stir to thicken your filling. Remove from heat.
  9. Remove Pyrex after 20 minutes and pour Peach mixture in.
  10. Roll out your remaining pie crust and cut into long 1 inch wide strips.
  11. Place pie crust strips lengthwise then crisscross like a basket weave (pretty pretty).
  12. Brush melted butter over the top of your pie crust basket weave and sprinkle a bit of sugar and cinnamon over the top if you like.
  13. Place back in the oven and bake for an hour.
  14. Remove Peach Cobbler and behold the magic!
  15. Serve with French vanilla ice cream if desired.
