Method
- Heat 3-4 Tbsp oil in a frying pan to medium-high heat.
- Season chicken breasts and dust with flour.
- Fry until golden brown on each side(about 2-3 minutes). Set on rack.
- Cook pasta according to package directions.
- Add remaining 1-2 Tbsp oil back to the frying pan.
- Add Shrimp, sun-dried tomatoes, herbs, and saute until cooked (shrimp 2 minutes per side generally).
- Add butter, chipotle mixture, marinara sauce, broth, and white wine.
- Let simmer until it comes to a slight boil and thickens slightly.
- Add cooked pasta.
- Toss with Romano cheese. Serve immediately.
