Pan Seared Cod in Red Pepper Sauce

Here's a great dinner idea, pan seared cod in red pepper sauce. Tender Cod seared to a golden brown and served in a decadently creamy red pepper sauce, enjoy.

Ingredients
  

  • 4 cod fillets about 6 ounces each
  • 2 Tbsp Olive Oil
  • Salt and pepper to taste
  • 1 tsp paprika Optional
  • 2 roasted red peppers jarred or homemade
  • ¼ onion diced
  • 2 garlic cloves minced
  • ½ cup heavy whipping cream
  • ¼ cup chicken broth
  • 1 more Tbsp Olive Oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley chopped

Method
 

  1. Pat cod fillets dry with paper towels. Season with salt, pepper and paprika.
  2. Heat 2 Tbsp Olive Oil in a large skillet over medium heat.
  3. Add fish to skillet and cook 3-4 minutes per side until opaque and flakes easily with a fork. Remove from skillet and set aside.
  4. In the same skillet add 1 Tbsp Olive Oil. Saute onions and garlic for 1-2 minutes over medium low heat until softened and fragrant.
  5. Add roasted red peppers, paprika and oregano. Cook for another 2 minutes.
  6. Transfer onion, garlic and red peppers to a blender and blend until smooth. Return sauce to skillet.
  7. Stir in heavy whipping cream and chicken broth. Stir to combine. Bring to a simmer.
  8. Adjust flavor with salt and pepper if needed.
  9. Return cooked cod back to the skillet. Spoon some the sauce over the cod and simmer another 2 minutes.
