Oven-fried Orange Roughy

Ingredients
  

  • ¼ cup flour
  • ¼ cup breadcrumbs
  • ¼ cup cornmeal
  • 1 Tb basil
  • ½ tsp lemon pepper
  • ¼ tsp salt
  • 1 ½ tsp lemon zest
  • white of 1 egg

Method
 

  1. Take flour add salt and lemon pepper mix and set aside
  2. Mix breadcrumbs cornmeal and 1 TB lemon zest in a bowl
  3. Add basil to the breadcrumb mix
  4. Froth egg whites
  5. Dip fillet into flour, then into an egg wash, then breadcrumbs, and place on wire rack
  6. Repeat for all fillets
  7. Place fillets into baking dish
  8. Preheated oven 450
  9. Bake for 12-15 minutes until fish is flaky.
