Method
- Take flour add salt and lemon pepper mix and set aside
- Mix breadcrumbs cornmeal and 1 TB lemon zest in a bowl
- Add basil to the breadcrumb mix
- Froth egg whites
- Dip fillet into flour, then into an egg wash, then breadcrumbs, and place on wire rack
- Repeat for all fillets
- Place fillets into baking dish
- Preheated oven 450
- Bake for 12-15 minutes until fish is flaky.
