Clean chicken and pat dry with paper towel. Apply or spray cooking oil.
Mix garlic powder, onion powder, dried oregano, dried basil, sweet paprika, salt and pepper into a dry mix. Apply to both sides of chicken breasts.
In a cast iron or oven safe skillet melt 1 Tbsp of oil and 1/2 teaspoon butter over medium heat.
Add chicken and cook for 5-7 minutes per side until cooked through (internal temperature of 165°F.) Remove and set aside covered.
Add remaining butter to skillet over medium heat.
Add onions for about 2 minutes until translucent.
Add garlic for another 30 seconds until fragrant.
Add tomatoes and increase heat to medium high and cook until bubbling.
Stir in wine or chicken broth for about 2-3 minutes.
Add spinach and cook for 1 minute until spinach is wilted.
Transfer chicken back to the mix.
Preheat broiler.
Top chicken with Mozzarella.
Broil in oven for 2-3 minutes until golden. Remove and garnish with parsley.
