Season beef with salt and pepper generously. Sear beef in small batches with one Tbsp of olive oil in a deep pot or Dutch oven oven medium high heat. Set aside.
Heat the remaining olive oil in the same pot and add your chopped onions and cook until soft(about 5 minutes).
Add beef, French Onion Soup, broth, bay leaf and Worcestershire Sauce. Bring to a boil. Reduce to a simmer and cook for 2 hours or until fork tender. Check at the hour and a half mark.
Combine cornstarch and cold water gradually. Whisk together and add to thicken gravy. Give it a taste. Add seasoning if needed (probably not).
