Molettes

Molettes are an easy to make sandwich from Northern Mexico. This meatless meal is made with re-fried bean, cheese, and red sauce so its filling and packs a flavorful punch.  Molettes a great for meat loves and non-meat eaters alike. Enjoy

Ingredients
  

  • 2-4 crusted finger rolls
  • 2 Tbsp butter softened
  • 1 16 oz can re-fried beans I used fat free
  • 1 ¼ cup Cheddar cheese grated or shredded
  • Salsa
  • Green salad leaves for garnish

Method
 

  1. Cut rolls in half and lay on baking sheet.
  2. Preheat broiler.
  3. Spread rolls with a light coat of butter.
  4. Let buttered rolls broil 2-3 minutes checking frequently until golden brown.
  5. Heat re-fried beans on low heat.
  6. Scoop beans onto the rolls and sprinkle with cheese from up top.
  7. Place rolls back under the broiler just until cheese melts perfectly.
  8. Remove from oven and serve with salsa and garnish with salad leaves.
