Method
- Melt butter in a large cast iron skillet over medium high heat.
- Add corn and cook, stirring occasionally slightly charred. About 8-10 minutes.
- Add garlic and red bell peppers the last 2 minutes of cooking if using.
- Turn off heat and allow to cool slightly.
- Stir in mayonnaise, chili pequin, cotija cheese and lime juice.
- Season with Salt to taste.
Garnish with cilantro and serve immediately.
