Mediterranean Chicken Kabobs

You can easily make savory Mediterranean Chicken Kabobs. They're first prepared in a vibrant marinade of garlic and lemon then grilled to a nice char, enjoy.

Ingredients
  

  • 2-3 boneless skinless chicken breasts cut into 1in cubes
Marinade:
  • Zest of 1/2 a lemon
  • Juice of one lemon
  • ½ small onion finely grated looking to get mostly the juice
  • 2-3 garlic cloves minced
  • Handful of fresh parsley chopped
  • 2-3 fresh mint leaves finely chopped
  • 1 Tbsp dried oregano
  • Salt and pepper
  • 2 Tbsp Olive Oil
  • Skewers soak in water for 30 minutes if using wooden

Method
 

  1. Combine marinade ingredients well.
  2. Add cubed chicken and mix together with hands.
  3. Let marinate at least 30 minutes or up to 4 hours.
  4. Thread chicken onto skewers and grill 4-5 minutes per side (rotating frequently) until juices run clear and chicken reaches a beautiful golden brown.
  5. Remove and serve with a Greek salad or your favorite pairing.
