Lobster Fra Diavolo

Lobster Fra Diavolo is a great Italian meal. Made with linguine, lobster, and herbs this pasta dish is bound to be a favorite, enjoy.

Ingredients
  

  • 1 lb Linguine
  • 2-3 lobster tails cooked and cubed
  • 3 Tbsp Olive Oil
  • 1 onion finely chopped
  • 3 garlic cloves chopped
  • ½ tsp crushed red pepper
  • ½ tsp dried oregano
  • ½ tsp Salt
  • ½ tsp cracked black pepper
  • ½ cup cognac
  • 14.5 oz can diced tomatoes
  • 3 Tbsp fresh parsley chopped
  • 4 fresh basil leaves chopped

Method
 

  1. In a large pot cook pasta according to package directions reserving 1/2 cup pasta water.
  2. Heat olive oil in a large cast iron or heavy skillet over medium high heat.
  3. Add onions and cook for 3-4 minutes.
  4. Add garlic, red pepper flakes, salt, pepper and oregano. Mix together for about a minute.
  5. Add cognac and scrape up the brown bits.
  6. Add diced tomatoes, lobster, chopped parsley and basil. Mix well until heated through.
  7. Add Linguine to the mix and combine well with the sauce.
  8. Add a little of your reserved pasta water if sauce is a bit dry.
  9. Taste and add seasoning if needed (probably not).
  10. Serve with crusty Italian bread.
