Method
- Preheat oven to 425°F.
- Line a baking sheet with parchment. Set aside.
- To a blender or small food processor add your olive oil, lemon juice and zest from 1 lemon, garlic, Zaatar, salt and red pepper flakes.
- Blend until smooth.
- In a large bowl add chicken and pour Marinade over and combine well. Allow to marinate while you prepare the vegetables.
- Add cut potatoes to the bowl.
- Cut red onion in half and each half into quarters.
- Quarter the lemons the same way.
- Add the onions and lemon to the bowl and combine everything well.
- Pour onto your prepared baking sheet, sprinkle paprika over the top and bake for 30-35minutes.
- Remove from oven, sprinkle with green onions and spoon over sauce drippings.
