Lasagna Pinwheels

Kenny's back in the kitchen making lasagna pinwheels, you may have had lasagna before but not like this! It's a tasty and creative spin on the lasagna dish a definite must-try. Enjoy!

Ingredients
  

  • ½ onion diced
  • 1 ½ lbs turkey sausage
  • 1 tsp fennel seeds
  • 1 ½ tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 tsp basil
  • red sauce
  • ¾ cup ricotta cheese
  • lasagna noodles

Method
 

  1. In a large pan heat 2 tbsp oil and add 1/2 onion diced (med-low heat)
  2. Simmer 2 min until translucent
  3. Add sausage to pan and season with fennel seed, Italian seasoning, and basil. Break up meat and brown over med heat (5 min)
  4. Drain oil from browned meat, reduce heat to med-low and add red sauce and simmer 30 min
  5. Prepare lasagna pasta
  6. In a bowl combine 3/4 cup ricotta cheese and 1 egg. Whip until creamy
  7. Place a spoonful of whipped ricotta cream onto pasta and spread to cover the entire surface
  8. Follow by covering with Parmesan cheese and meat sauce
  9. Roll pasta as tight as possible and repeat with the remaining pasta
  10. Cover bottom of a baking pan with meat sauce and line pan with lasagna pinwheels
  11. Cover pinwheels with a cup or two of cheese
  12. Preheat oven to 450 and bake for 20-25 min until golden brown
