Combine olive oil, lemon juice, garlic, thyme, salt and pepper
Mix well
Marinade chops in mixture and let sit for 30 min @ room temp
Once chops are ready preheat an skillet over medium high heat
cook chops 4 min per side
Once chops a done remove from pan and set to side
Using the same skillet add 1 cup white wine and bring to boil
Add 1/4 cup Dijon mustard
Add 1 clove garlic minced and thyme
Stir and bring to boil
Reduce heat and simmer several minutes until thickens
Return chops to mustard sauce and simmer several minutes
