Heat 1 1/2 Tbsp oil in a large pot or Dutch oven. Brown ground turkey on one side for about 3 minutes on medium high heat. Flip and break up meat.
Add diced veggies and garlic to the mix.
Note: You can saute garlic and veggies in a separate skillet in 1 Tbsp of oil for even more flavor.
Add tomato paste. Combine well then add fire roasted tomatoes and stir in well. Add tomato soup, chicken broth and beans stir and simmer for at least 30 minutes. The longer the better. Chili will even taste better tomorrow.
Bake box cornbread according to package directions. Hollow out with a small bowl to make cornbread bowl. Fill with chili and garnish with shredded cheese, grilled Jalapeño and dollop of sour cream.
