Italian Braised Chicken

This Italian braised chicken can be easily made in your own kitchen. Tender braised chicken smothered in a hearty sauce of basil, tomato, and brown sugar. Enjoy

Ingredients
  

  • 1 lb. Chicken Thighs bone in
  • Salt
  • Ground black pepper
  • 14 oz canned whole peeled tomatoes half of a 28oz can
  • 1 Tbsp Olive Oil
  • ½ onion diced
  • 3 garlic cloves minced
  • 10 fresh Italian Basil leaves chopped
  • Salt to taste
  • 1 Tbsp brown sugar
  • 1 Tbsp Italian parsley chopped for garnish

Method
 

  1. Rinse Chicken and pat dry with paper towels. Season with salt, pepper, and garlic powder on both sides.
  2. Puree the tomatoes in a food processor or blender.
  3. Heat braised or cast iron skillet on high heat then add chicken (skin side down) and brown both sides.
  4. Remove chicken but leave the juices that seep out.
  5. Reduce heat to medium and add olive oil.
  6. Saute onions and garlic for a couple of minutes until onions soften a bit.
  7. Add tomato puree and basil. Stir well.
  8. Transfer chicken back to the mix. Cover and let simmer for 20 minutes or until chicken is tender.
  9. Add brown sugar (salt to taste if needed) and combine well.
  10. Garnish with Italian parsley.
