Method
- In a medium sized bowl mix jerk Marinade, honey, fresh thyme, olive oil, orange juice and zest. Whisk together well.
- Place Lamb chops in a large zip lock bag and pour 3/4 of the Marinade over Lamb chops, massage in well and seal. Allow to marinate for at least an hour or up to overnight.
- Preheat grill to medium high or white hot charcoal if using charcoal.
- Grill Lamb chops for about 3-4 minutes per side.
- Transfer to a plate and let rest a few minutes before serving.
