Heavenly Deviled Eggs w Blackened Shrimp

Deviled egg are a great mid day snack or meal. This recipe combines egg yokes, a custom spice blended, and blackened shrimp. It's so devilishly good its heavenly. Enjoy

Ingredients
  

  • 1 dozen boiled peeled eggs
  • cup mayonnaise
  • 1 Tbsp yellow mustard or Dijon
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp Cajun Seasoning
  • Salt and pepper to taste
  • For Blackened Shrimp Seasoning
  • 12 13 Jumbo Shrimp (an extra 1 for snacking purposes) cleaned peeled and de-veined
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp fresh cracked black pepper
  • ½ tsp Salt
  • 1 Tbsp butter
  • 1 Tbsp grapeseed oil
  • Paprika and fresh chopped parsley for garnish Optional

Method
 

  1. Cut your eggs in half lengthwise and separate egg yolks into a separate bowl.
  2. Set egg whites on a plate to the side.
  3. Smash egg yolks with a fork and mix with mayonnaise, mustard, apple cider vinegar, Cajun Seasoning, garlic powder, salt and pepper until creamy. Taste and adjust flavor if needed.
  4. Evenly distribute egg yolks mixture into your egg white halves with a spoon, piping bag (I cut the tip of a plastic zipper bag, worked perfectly).
  5. Sprinkle with paprika (you can store in the refrigerator for up to 2 days).
  6. In a large cast iron skillet add 1 Tbsp butter and 1 Tbsp oil.
  7. Heat on medium high until butter melts.
  8. Add Shrimp and cook for 2 minutes per side.
  9. Top your Heavenly Deviled Eggs with shrimp, garnish with chopped parsley
