Method
- Preheat grill to 400-450 degrees for direct grilling.
- In a small bowl combine Chipotle Dry Rub ingredients.1 Tbsp brown sugar, 1 tsp sea salt, 1 tsp black pepper, 1 tsp Chili powder, 1 tsp granulated garlic, 1 tsp onion powder, 1/2 tsp Chipotle chili pepper, 1/4 tsp cayenne pepper
- Trim any excess fat from skirt steak and cut into pieces for easier handling.
- Season skirt steak generously with Chipotle rub.
- Grill steak over direct heat 3-4 minutes per side in total (actually flipping every 2 minutes for an internal temperature between 125-135°F).
- Remove from grill and allow to rest for 10 minutes before slicing.
- Slice against the grain by cutting the long steak into short sections, then cutting into thin tender strips.
- Serve with sliced, grilled onions and colorful green peppers Fajita style or just dig in.
