Grilled Mahi Mahi

Mahi Mahi is a great fish for grilling and Kenny show how he prepares it with his own spice blend marinade. Enjoy

Ingredients
  

  • 3-4 Mahi Mahi fillets 4-6 ounces each
  • Olive oil or cooking spray
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • ¾ teaspoon Kosher Salt
  • ½ teaspoon garlic powder
  • 11/2 Tbsp Olive Oil

Method
 

  1. Preheat grill to medium high heat. Lightly oil spray or brush grates with olive oil.
  2. Place fillets on a large plate or baking sheet. Lightly spray or brush both sides with olive oil.
  3. In a bowl, stir together the paprika, chill powder, cumin, thyme, salt, garlic powder and olive oil until a paste forms.
  4. Rub the spice paste all over the Mahi Mahi fillets.
  5. Place fillets on oiled grill. Cook for 2-3 minutes, then flip and cook until the fish is just cooked through (about another 2 minutes).
  6. Serve over Asparagus and top with Mango salsa if you desire.
