Method
- Pat chops dry with paper towels and line on a plate or baking sheet.
- In a bowl, whisk ingredients together.
- Place Lamb Chops in a storage/freezer bag, pour Marinade over chops and let marinate for at least 30 minutes (overnight for even more incredible flavor).
- Heat oil in a pan over Medium high heat until just starting to smoke (cast iron preferably or grill plate etc.).
- Fry or grill Lamb Chops in 2 batches for 3-4 minutes per side (I did 3 minutes @ medium) depending on thickness.
- Let rest 5 minutes before serving.
Note: Let your chops sit at room temperature for 30 minutes before cooking.
Serve over a Greek salad, rice or potatoes
