Greek Chicken Souvlaki

If you're a lover of Greek chicken this recipe is for you. Tender white meat marinaded in a combination of olive oil and herbs then grilled on skewers and serve alone or on pita bread. Souvlki Greek chicken is always a winner, enjoy.

Ingredients
  

  • 2 lbs boneless skinless chicken breasts cut into healthy chunks
For Marinade
  • cup extra virgin olive oil
  • Juice of half a lemon plus the lemon zest
  • 5 garlic cloves minced
  • 2 Tbsp fresh Rosemary chopped
  • 2 Tbsp fresh thyme roughly chopped
  • 1 Tbsp dried oregano
  • ¼ tsp crushed red pepper
  • 1 tsp coriander
  • 1 Tbsp Kosher Salt
  • ½ tsp fresh cracked black peppe

Method
 

  1. Combine all Marinade ingredients together
  2. Transfer marinade mixture to a plastic zipper bag.
  3. Add chicken, zip and massage marinade into the chicken. Let marinate in the refrigerator for 4-6 hours.
  4. Remove chicken from marinade and thread onto skewers (if using wooden skewers soak in water for 20 minutes).
  5. Grill on both sides checking frequently until golden brown and cooked through.
  6. Serve on pita bread, tomatoes, red onions, tzatziki sauce and roasted Veggies!
