Garlic Roasted Tomato and Spinach naan bread pizza

This is a great recipe for making pizza fast at home using garlic naan bread as the crust. Join Kenny as he makes his newest kitchen creation.

Ingredients
  

  • 2 thin-cut chicken breast
  • Grape tomatoes halved
  • 6 garlic cloves minced
  • Extra virgin olive oil
  • 1 ΒΌ tsp Kosher salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cups spinach
  • Mozzarella cheese

Method
 

  1. In a bowl mix, 3 cloves minced garlic, 2 tbsp olive oil, 1 1/4 tsp salt, 1 tsp pepper, and 1 tsp Italian seasoning. Whisk well
  2. Add tomatoes and stir to cover in sauce
  3. Preheat oven to 300
  4. Spread tomatoes and sauce onto baking pan and roast for an hour
  5. Season chicken
  6. Preheated skillet on med-high heat and grill chicken 8-10 min per side (chop into small piece once cooked)
  7. On medium heat add 2 tbsp of olive oil to a pan then saute 2 cups spinach and 3 minced garlic cloves 1-2 min. until wilted
  8. Drizzle 1 tbsp olive oil onto naan bread and spread evenly on the entire surface
  9. Layer on mozzarella cheese, spinach, and tomatoes (chicken also for nonveggie pizza)
  10. Preheat oven to 450 and bake 9-10 min until crust is golden brown and cheese melted
