Garlic Parmesan Lobster Bites

These garlic Parmesan lobster bites aren't your average snack. It's delicious bites of seasoned lobster, battered and fried. Then tossed in a decadent sauce and covered in Parmesan cheese.  Make these garlic Parmesan lobster bites for your next gathering, for the kids, or just for yourself. Enjoy

Ingredients
  

  • 2-3 Lobster Tails
  • 1 cup flour
  • 1 cup cornstarch
  • 3 Tbsp Cajun Seasoning divided
  • ¾ cup club soda
  • 1 cup vegetable oil for frying
  • For Garlic Parmesan Sauce
  • ¼ cup Parmesan cheese shredded
  • ½ stick of butter
  • 2 Tbsp garlic minced or paste
  • 1 Tbsp fresh parsley chopped
  • 1 Tbsp hot sauce optional

Method
 

  1. Remove Lobster meat from shells, clean, de-vein and pat dry.
  2. Cut into bite-sized chunks and season with 1 Tbsp Cajun Seasoning.
  3. In a medium sized bowl combine flour, cornstarch, remaining Cajun Seasoning and club soda (batter should be about the thickness of pancake batter).
  4. Preheat vegetable oil in large frying pan to 350°F.
  5. Place Lobster Bites in batter and fry for 3-4 minutes per side.
  6. Remove and place on wire rack to drain.
  7. (Sauce) In a medium sized bowl melt butter.
  8. Add garlic, parsley and hot sauce. Mix well.
  9. Toss Lobster Bites in sauce and top with Parmesan cheese. Serve immediately.
