Garlic Brown Sugar Lamb Ribs

Garlic brown sugar lamb ribs, need I say more? This recipe sears lamb ribs then smothers then in a deliciously sweet brown sugar sauce...you'll thank me later, enjoy.

Ingredients
  

  • 1 lamb rib rack cut into servings
  • 6 cloves garlic minced
  • 3 Tbsp Olive Oil
  • 1 Tbsp fresh Rosemary chopped
  • cup chicken broth
  • 3 Tbsp brown sugar
  • 4-5 sprigs fresh Rosemary
  • Salt and pepper to taste
  • 2-3 green onions chopped for garnish

Method
 

  1. Preheat oven to 400°F
  2. Heat large cast iron skillet on medium high heat. Add oil once hot.
  3. Season lamb with salt and pepper on both sides.
  4. Add to the skillet and sear on both sides for 5-7 minutes.
  5. Transfer to a plate and cover with aluminum foil.
  6. Reduce heat to medium, add garlic and saute for about 30 seconds until fragrant.
  7. Next add chopped Rosemary. Allow to simmer another 30 seconds or so.
  8. Add brown sugar and broth. Combine until sugar has totally dissolved.
  9. Season with salt and pepper to taste. Stir and allow sauce to thicken for about 4-5 minutes.
  10. Return lamb ribs back to the pan.
  11. Baste with sauce add a few sprigs of Rosemary and transfer to the oven for 5-7 minutes.
  12. Finish on broil for 1-2 minutes and serve.
