Method
- Season chops with a healthy dose of salt and pepper. Set aside.
Marinade: In a medium-sized bowl combine Thyme, oregano, rosemary, garlic, and olive oil. Whisk together well.
- Pour Marinade over chops and massage into the meat. Let sit for about 20 minutes at room temperature.
- Heat a large cast-iron skillet for 30 seconds.
- Add oil and reduce heat to medium-high heat.
- Sear chops until well browned on the first side (about 3 minutes).
- Flip the chops and for another 3-4 minutes (depending upon thickness).
- Transfer to a warm plate and let rest for 5 minutes to allow the proteins in the meat to relax for maximum scrumptiousness!
- Serve with your Favorite sides.
Internal temperature should be 135°F for a perfect medium-rare.
