Fried Catfish Po-Boy

Were making a tender and crispy fried catfish Po-Boy. The Po-Boy is a classic sandwich that comes in many protein variations and the catfish Po-Boy is one of the best, enjoy.

Ingredients
  

  • 4 catfish fillets 4-6 ounces each
  • Soft Hoagie rolls
  • 2 Tbsp mustard
  • 1 cup cornmeal
  • Salt and pepper
  • 1 tsp granulated garlic
  • 1 tsp Worcestershire seasoning
  • ½ cup all purpose flour
  • Butter for toasting bread
  • 2 cups shredded lettuce
  • 1 large tomato sliced
  • ½ cup mayonnaise
  • Oil for frying

Method
 

  1. Clean and trim catfish fillets.
  2. Apply mustard coating them evenly on all sides.
  3. In a large bowl combine cornmeal, all purpose flour salt, pepper, granulated garlic and Worcestershire seasoning.
  4. Dredge catfish fillets in seasoning blend. Set aside.
  5. In a large skillet or Dutch oven, heat vegetable oil to 350° F.
  6. Fry catfish in batches until golden brown and internal temperature of 145° F is reached.
  7. Use a slotted spatula to remove catfish to a wire rack lined with paper towels.
  8. Split Hoagie rolls lengthwise, butter and toast until crispy.
  9. Apply mayonnaise to both sides. Add tomato slices, shredded lettuce or whichever topping you choose. Finally add a golden brown catfish fillet. Melt cheese on top if desired.
