Method
- Clean fish and pat dry with paper towels.
- In a large bowl add cornmeal and seasonings.
- Dredge fish well and set on a plate.
- Heat oil to 350° F.
- Fry fish in batches 4-5 minutes until crispy and golden.
- Remove and place on a rack.
- Serve with baked Spaghetti if it's Friday. Be sure to have some extra hot sauce for dipping.
