Fire Roasted Tomato Soup

This fire-roasted tomato soup recipe has what it takes to get you thru the cold days and nights. Paired with grilled cheese it will definitely be a favorite. Enjoy

Ingredients
  

  • 2 Tb grape seed or olive oil
  • 2 cans fire-roasted tomatoes
  • 8 oz. roasted red bell peppers chopped
  • 2-3 cloves garlic minced
  • 1 small yellow onions diced
  • 2 Tb tomato paste
  • 1 cup vegetable broth
  • 1 ½ Tb smoked paprika
  • ¼ tsp cayenne pepper
  • ½ tsp cumin
  • ½ tsp cracked black pepper
  • ½ tsp brown sugar

Method
 

  1. Preheat oil in a pan (medium heat) and add onions. saute for 2-3 min
  2. Add garlic and simmer for 1-2 min
  3. Stir in fire-roasted tomatoes, roasted peppers, and  tomato paste and mix
  4. Combine the vegetable broth into the mixture
  5. Season with pepper, cumin, paprika, and brown sugar
  6. Stir and simmer for 15 min
  7. After simmering you can remove the large pieces of tomato and pepper and place them in a blender or processor to create the consistency you like
  8. Return to soup and mix well
  9. This tomato soup recipe is delicious topped with sour cream or cheese and a side of buttered bread. Plate and Enjoy!
