Fire Cracker Chicken

Ingredients
  

  • 2 lb chicken breast
  • Salt
  • Pepper
  • cup corn starch
  • 2 eggs
  • Vegetable oil
  • ½ cup brown sugar
Sauce ingredients
  • 1 Tb rice wine vinegar
  • ¼ tsp red pepper flakes
  • cup wing sauce

Method
 

  1. Cut chicken breast into 1 inch cube
  2. Season both sides with 1-2 tsp of salt and pepper
  3. Add corn starch and fully coat
  4. In a bowl medium size bowl break two eggs
  5. Vigorously blend yoke and white to create egg wash
  6. Preheat skillet with 3-4 Tb oil over med heat
  7. Dip coated chicken piece into egg wash and place in hot skillet
  8. Let cook 3-4 minutes per side until golden brown
  9. Place on wire rack to drain and cool
  10. Preheat over to 350
  11. In large bowl blend rice wine vinegar, red pepper and wing sauce
  12. Place chicken in 9 x 13 baking dish
  13. Cover with sauce and blend well to saturate all of chicken
  14. Spread chicken out to single layer
  15. Bake for 25 min. turn and stir half way thru baking
  16. This deliciously crispy chicken goes great over a bed of rice and topped with green onions.
