Method
- Combine dry ingredients in large bowl mixing well
- In a separate bowl add half of the mixture and set the remaining to the side
- Add 1/4 cup water and whisk together to create wet batter
- Carefully cut the center line of the shells with kitchen sheers
- Carefully crack back the shell and separate it from the meat. It may take a while so be patient
- Lay the meat on top of the shell but do not completely separate
- Season the meat with Old bay or other seasoning salt
- Using the wet and dry batters dip the lobster into the wet batter then into the dry batter
- Preheat oil or deep fryer to 350
- Fry the lobster tail and all for 3-4 min
This recipe and batter works just as well with shrimp and fish!
