Deep Fried Lobster Tail

Kenny's starting the new year right with deep fried lobster tails.

Ingredients
  

  • 2 6 oz lobster tails
  • 2 cups corn meal
  • ½ cup flour
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Argo corn starch
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Combine dry ingredients in large bowl mixing well
  2. In a separate bowl add half of the mixture and set the remaining to the side
  3. Add 1/4 cup water and whisk together to create wet batter
  4. Carefully cut the center line of the shells with kitchen sheers
  5. Carefully crack back the shell and separate it from the meat. It may take a while so be patient
  6. Lay the meat on top of the shell but do not completely separate
  7. Season the meat with Old bay or other seasoning salt
  8. Using the wet and dry batters dip the lobster into the wet batter then into the dry batter
  9. Preheat oil or deep fryer to 350
  10. Fry the lobster tail and all for 3-4 min
  11. This recipe and batter works just as well with shrimp and fish!
