Method
- Cut through top side of lobster tails and carefully dig out the meat.
- Clean and cut into bite-sized chunks.
- In a bowl combine eggs, hot sauce, mustard and dry seasonings.
- Add lobster chunks to egg mix and combine.
- In a separate container combine flour and cornstarch (Pro Tip: season that flour mixture a tad bit).
- Strain lobster bites and add to the flour mixture. Give them a good toss .
- Heat oil to 350° F.
- Fry lobster bites 3-5 minutes or until golden brown and beautiful.
- Remove to a paper towel lined baking sheet with rack to keep crispy.
- Serve with your favorite dipping sauce.
Fry a lobster tail shell for presentation if you wanna get fancy with it.
