Crunchy Taco Cupcakes

This crunchy taco cupcake is a creative twist to the traditional taco. It's got seasoned ground beef, cheddar cheese, and all topping of a taco prepared in a cupcake mold. The whole family will love this crunchy taco cupcake, enjoy.

Ingredients
  

  • 2 lbs ground beef
  • 1 package won ton wraps
  • 8 ounces sharp Cheddar cheese shredded
  • Diced tomatoes or salsa
  • Cilantro
  • Sour cream
  • Cooking spray
  • 1 pkg Taco Seasoning
or 1 Tbsp of each:
  • Taco Seasoning
  • Onion Powder
  • Garlic Powder
  • Salt
  • Pepper
  • Ground Cumin
  • Chili powder
  • Dried Oregano
Mix well

Method
 

  1. In a large cast iron skillet add ground beef and cook over medium high heat, breaking up beef with spatula as it cooks.
  2. Cook about 5-7 minutes until browned and cooked through. Drain oil.
  3. Add 1/2 cup of water and seasoning. Combine well (taste and adjust seasoning if needed).
  4. Preheat oven to 375°F
  5. Spray cupcake tins with cooking spray.
  6. Line each cup with 1 won ton wrap each.
  7. Add a spoonful of Taco beef filling then top with shredded cheese.
  8. Place a second layer of won ton over the cheese.
  9. Repeat the process with beef and cheese.
  10. Bake for 15-18 minutes.
  11. Remove and let rest for a few minutes.
  12. Top with salsa, sour cream and Cilantro.
