Creamy Tuscan Garlic Tortellini Soup

Ingredients
  

  • 1 16 oz package Cheese Tortellini
  • 2 Tbsp Extra virgin olive oil
  • 1 Small onion finely diced
  • 4-5 garlic cloves thinly sliced
  • 3-4 oz Sun-dried tomatoes 6-7pieces
  • 4-5 mini red sweet peppers chopped
  • 7-8 cherry tomatoes whole
  • Handful of spinach
  • 2 Tbsp tomato paste
  • 1 ½ Tbsp Italian seasoning blend
  • 3 cups chicken or vegetable stock
  • 1 cup heavy whipping cream
  • 1 cup Parmesan cheese freshly grated
  • Juice of half a lemon
  • 2-3 bay leaves

Method
 

  1. In a large pot over medium heat add olive oil.
  2. Once hot add garlic and onions and cook for 30 seconds until fragrant.
  3. Add sun-dried tomatoes and Italian seasoning blend. Mix in red peppers and cook for another minute or so.
  4. Pour in chicken stock and bring to a simmer.
  5. Add Tortellini and cherry tomatoes.
  6. Next add Parmesan and heavy cream. Give it a good stir.
  7. Stir in a squeeze of lemon juice, add the bay leaves and let simmer for 10 minutes. Whisk in 1 Tbsp flour for thicker consistency if needed.
  8. Serve immediately with crusty bread.
