Method
- In a large pot over medium heat add olive oil.
- Once hot add garlic and onions and cook for 30 seconds until fragrant.
- Add sun-dried tomatoes and Italian seasoning blend. Mix in red peppers and cook for another minute or so.
- Pour in chicken stock and bring to a simmer.
- Add Tortellini and cherry tomatoes.
- Next add Parmesan and heavy cream. Give it a good stir.
- Stir in a squeeze of lemon juice, add the bay leaves and let simmer for 10 minutes. Whisk in 1 Tbsp flour for thicker consistency if needed.
Serve immediately with crusty bread.
