Cut fillets (width-wise) to create 3 in section
Rub olive oil onto fish then season with salt, pepper and fresh-squeezed lemon juice
Holding fillet section on its side cut a pocked into fish (don't cut all the way thru fish)
Make sure spinach is thawed before use if frozen and slightly sauteed if fresh
In a large bowl mix spinach, cream cheese, Parmesan cheese, garlic, salt, and pepper (Allow cream cheese to sit out at room temp before using)
Stuff salmon with several tbsp of filling
To bake preheat oven to 350 and bake 18-20 min
To grill or fry preheat to med-high (add 1 1/2 tbs oil and 1 tbs butter to pan)
Reduce heat to med then cook skin side up first then flip (6-7 min per side)
