Method
- Melt butter in a large pot or Dutch oven on medium high heat.
- Add onions and cook until fragrant and golden (about 3-4 minutes).
- Add garlic and cook for another minute.
- Whisk in flour for 1-2 minutes until flour starts to turn golden.
- Pour in your stock, Broccoli Florets, carrots and Seasonings.
- Bring mixture to a boil then reduce heat to a medium low and let simmer for about 15 minutes.
- Add half and half and stir in Cheddar cheese. Simmer for another minute or so. Adjust flavor if need be.
Serve with crusty Italian bread if desired.
